Seriously Garden Fresh The Argus Dining Room in Hepburn Springs gives a whole new meaning to garden fresh. Chefs just have to head out the kitchen door to pluck a few veges from the Argus Kitchen Garden. The fresh-from-the-backyard produce is supplemented with rare-breed beef and lamb that hails from a nearby farm in Smeaton. So who’s running the show in the kitchen? Executive Chef David Willcocks joined The Argus Dining Room after three years at the world-renowned Schilo Kitchen in Malaga, Spain. Sharing his passion for farm-to-table with diners, Willcocks creates dishes that speak for themselves. Start with the beetroot Carpaccio, served with pumpernickel, apple, buttermilk and wildflowers. Of course the menu is constantly reimagined depending on what’s fresh locally, so you’re likely to discover a just-created delight that will stay on the menu only fleetingly. There might be a Hampshire Down lamb loin or Sher Wagyu. For a true dining experience, try the five- or seven-course degustation menu, which includes a vegetarian option.
