Conveniently located within the scarily hip Hemmesphere bar (perfect for pre- and post-dinner drinks amongst the stylish set), sushi e continues the theme of comfortable sophistication - so rare in a sushi restaurant. Chef Nobuyuki Ura and his team provide entertainment behind the counter of the rectangular bar as they slice, roll and blowtorch with the skill and dexterity of culinary performance artists. It can only make one appreciate all the more the product of their labours. The signature spider rolls with dry-fried soft-shell crab, cucumber and lettuce are highly recommended. Ura 's sushi and sashimi melt in the mouth, while his hot mains have all the subtle richness of good traditional Japanese food with an Australian twist, such as the wagyu beef with ponzu sauce, grated radish and chives.
