Hosokawa by name and Hosokawa by nature, this new Hamilton eatery is a bastion of classic, refined Japanese cuisine thanks to its chef and co-owner, Akio Hosokawa. From sushi, sashimi, temaki and nigiri, the staples of Japanese cooking are well represented on the menu but this place ain't no one trick pony. Shabu shabu, hot pots and a wide range of rice, noodle and soup dishes (don, udon and ramen) round out the diverse selection here.
